VWR exhibits laboratory tools with molecular gastronomy Rotary evaporators and magnetic stirrers - for making food. VWR tries out new ways for the exhibition at the Scanlab fair.
– You would be surprised by what you can cook up with the help of pipettes and shakers, says Søren Jacobsen, marketing coordinator at VWR.

The trend of molecular gastronomy, a scientific discipline that studies physical and chemical processes in cooking, has been strong for several years. Molecular gastronomy seeks to investigate and chemically explain the reasons behind the transformation of ingredients, as well as social, artistic and technical components of culinary and gastronomic phenomena in general. And what could be more adequate than combining this good tasting scientific field with high-end research equipment?

– I got the idea in Madrid. We were visiting a distributor and saw a German company doing this and I thought that molecular gastronomy would work perfectly with our equipment, says Søren Jacobsen.

The molecular gastronomy group NaCl, Nordic Academy of Culinary Leisure, will be doing the cooking at VWR’s stand at Scanlab. They are a group of talented young chefs committed to developing Danish gastronomy. The matchup between NaCl and VWR was good as the culinary group was looking for new equipment to explore a more technical style of modern cooking. But they are no strangers to this kind of equipment:

– It is not unusual for us to work with laboratory-like equipment. We want to explore the more technical side of cooking, says Nikolai Tram, founder of NaCl.

– The NaCl chefs will be making a special VWR caviar at the Scanlab fair with the help of pipettes. Roners, machines that can cook in a vacuum at a particular temperature, can also be found in laboratory equipment and used for this kind of cooking.

– The gastronomical event is a way for VWR to change their customers’ view of the company. Søren Jacobsen says that VWR has been too strongly associated with products only.

– We have a huge knowledge of support, service, logistics and advice. With this exhibition we want to say that we can “think outside the box”, says Søren Jacobsen.

He is convinced that this event will be a hit, drawing attention to VWR’s laboratory equipment.

– I guess we are taking somewhat of a risk, as it is such a different way of showing our products. But I am pretty sure that the attention will make it a success, says Søren Jacobsen.
